It’s Taco Tuesday, everyone. The best day of the week! Time to round up all of our favorite taco inspired recipes and share.
Tacos, back in the day, were strictly hard corn tortilla shells, ground beef seasoned with red chili powder and maybe some cumin if our mom was fancy. Top with cheese you had to shred with a knuckle-busting box grater, chopped tomatoes, and shredded lettuce.
When I was a kid, we had tacos about four times a year just like that. I don’t even remember jarred salsa until the 80s, or fresh cilantro until much more recently.
Now any protein, any form of shell (or no shell at all!), and multiple variations on the basic chili powder can make a taco. Here are five taco recipes from some of our favorite food bloggers.

These Shrimp Tacos from Kate at Life of A Ginger are super simple and delicious. And you just can’t go wrong with slices of fresh avocado.
This Skinny Taco Dip from Nancy of Skinny Kitchen looks tasty. It’s such an easy recipe that you’ll have it ready in less than 15 minutes. Not just for Taco Tuesday, whip this up for the football game crowd, or for casual entertaining.
Want something a little different this week? This Chicken Tortilla Soup is perfect. It’s Nancy’s culinary expertise at work again, and you’re bound to love it. It’s tacos done light, but with big flavor and great for a one-pot meal.
