This main course salad is so easy to make and it’s really, really good. It’s so healthy and satisfying, I could eat it several times a week and have! One large salad, including dressing, has 234 calories, 9 grams of fat and 6 Weight Watchers POINTS PLUS. So rich in fiber, each salad has 8 grams of fiber!

Ingredients for One Main Course Salad:
3 cups romaine lettuce, chopped
⅓ cup cooked chicken, diced
¼ cup corn, fresh off the cob or frozen and defrosted
¼ cup tomatoes, chopped
¼ cup orange, yellow or red bell pepper, chopped
¼ cup avocado, diced
2 tablespoons The BEST Skinny Ranch Dressing (3 ingredients) or your favorite bottled light ranch dressing
1 tablespoon salsa
Instructions
1. Line a dinner size plate with lettuce. On top of lettuce, add the chicken, corn, tomatoes, bell peppers and avocado. In a small bowl, mix together the ranch dressing and salsa. Drizzle over the salad and serve.
2. This recipe can be doubled, tripled and so on.
