Right after Thanksgiving each year, I visit New York City with my mom, sister and aunt. We try to have at least a few lunches at Forty Carrots Cafe in Bloomingdales. My favorite thing on the menu is their chicken soup! The broth is so yummy, slightly sweet and not salty at all. It’s naturally sweet due to a bunch of chopped and shredded carrots. In addition, it’s loaded with chicken breast chunks, small pasta and fresh dill. Since I only get to New York once or twice a year, I decided to come up with a skinny home recipe. Instead of pasta, I’ve added broccoli slaw. It mimics noodles, tastes great in this soup and is so healthy for you. Each 2 cup serving has only 148 calories, 1 gram of fat, 4 grams of fiber and 3 Weight Watchers POINTS PLUS. You are going to LOVE it!

Cook Time: 30 minutes
Ingredients
1 (48 oz) can Swanson’s reduced-sodium chicken broth
1 (32oz) containers Swanson’s reduced-sodium chicken broth
1 pound raw chicken breasts, (boneless, skinless), diced
1½ cups celery, sliced
1 cup carrots, chopped
1 cup onions, chopped
½ teaspoon dried thyme
½ teaspoon sage
Fresh ground pepper, to taste
3 cups broccoli slaw, see shopping tips
3 cups carrots, shredded, see shopping tips
3½ tablespoons fresh dill, chopped
Instructions
1. In a large pot, add all the ingredients except broccoli slaw, shredded carrots and dill. Bring to a boil.
2. Reduce heat to low, cover and simmer for 10 minutes.
3. Remove cover, stir in broccoli slaw, shredded carrots and dill. Cover and cook for 10 more minutes.
Makes 12 cups, Each main course serving 2 cups

Healthy Benefits
There’s been many studies on the health benefits of chicken soup. Although studies have shown it’s not a cure for the common cold, it does help alleviate some of the uncomfortable symptoms that come with it.
Carrots have been renowned for their health benefits. They’re just about the best source of vitamin A.
Broccoli slaw has a bounty of vitamins A and C, plus an impressive fiber content. It boasts all the benefits of broccoli, simply in shredded form (along with a few carrots and the occasional purple cabbage leaf).
Shopping Tips
I’ve tried most of the chicken broths available and my favorite is Swanson’s reduced-sodium chicken broth. It comes in a 10, 32, and 48 ounce container.
You’ll find bags of shredded carrots and broccoli slaw in most supermarkets and Trader Joe’s.
Storage Tip
This soup freezes great. Divide and freeze in pint or quart size containers.
