Right after Thanksgiving each year, I visit New York City with my mom, sister and aunt. We try to have at least a few lunches at Forty Carrots Cafe in Bloomingdales. My favorite thing on the menu is their chicken soup! The broth is so yummy, slightly sweet and not salty at all. It’s naturally sweet due to a bunch of chopped and shredded carrots. In addition, it’s loaded with chicken breast chunks, small pasta and fresh dill. Since I only get to New York once or twice a year, I decided to come up with a skinny home recipe. Instead of pasta, I’ve added broccoli slaw. It mimics noodles, tastes great in this soup and is so healthy for you.
