Summer is slowly winding down. Some of us just don’t want it to go, while others are more than ready for pumpkin all the time. But if you’re one of those trying to hold onto summer with all you have – I’ve rounded up a few recipes to get you through the next few weeks with some flavorful cooking.

It’s still plenty hot out, even when fall starts lurking around the corner. Nancy of Skinny Kitchen has a Gazpacho recipe that both, looks and sounds just perfect for when you’re in the mood for soup but don’t want to have to stand over the hot stove for too long.
