Easy Easter Brunch Recipes

This easy to plan and serve brunch is a great idea for Easter Sunday, or any Sunday! From Jolene Ewert.

Planning an Easter brunch can prove to be a little simpler than a full-blown dinner. And this way, you have more time to do what really counts; spending time with your family and friends. Here are some quick and simple ideas to get in the spirit without the headaches and without spending a lot of money.

Easy Easter Brunch Recipes

Delicious Egg Casserole

Ingredients: 1 box of dry seasoned bread crumbs, 8 eggs, 1 tsp. seasoning salt, 2 tsp. yellow mustard, 8 oz. shredded cheddar cheese, 4 cups milk and ½ lb. fried bacon (crumbled).

Directions: Preheat oven to 350 degrees. Whisk together eggs, mustard, milk and salt; set aside. Spread croutons in a greased 9 x 13 inch pan. Sprinkle cheese over croutons. Pour the egg mixture over the top and sprinkle with the bacon. Bake for one hour.

French Toast Roll-Ups

Ingredients: White bread or Hawaiian bread, 8 oz. of cream cheese (softened), 2 eggs, ¼ cup butter, fruit topping of choice and cinnamon sugar.

Directions: Remove the crusts from 8 pieces of bread. Flatten each side with a rolling pin. Spread the cream cheese over one end of each slice of bread. Add a lining of your fruit topping on top of the cream cheese. Roll up each slice of bread. Crack the eggs into a shallow bowl and whip with a fork until frothy. Dip each roll-up into the egg mixture. Melt butter in skillet over medium high heat. Once butter is hot, add roll-ups to the skillet and fry until they are golden brown. Remove from skillet and roll in cinnamon sugar.

Tasty Fruit Salad

Ingredients: 1 large can fruit cocktail (DO NOT drain), 1 large package of instant vanilla pudding, 1 large can pineapple chunks (drain), 2 small cans of mandarin oranges (drain) and 8 oz. of frozen whipped topping (thawed).

Directions: In a large bowl, sprinkle the instant pudding over the fruit cocktail. Stir until the pudding dissolves. Add pineapple chunks and oranges, mix well. Fold in the whipped topping and chill before serving. Keep refrigerated.

Guests will enjoy making their own delicious smoothie combinations! Have on hand: serving glasses, spoons, straws, blender, fresh juices, milk, ice, frozen fruit and yogurt.
