Buffalo Turkey Meatballs

You’ll find all of the fabulous flavors of buffalo chicken wings in these bite size, skinny meatballs. Serve on the side with my skinny ranch dressing, for dipping.

Each yummy meatball has only 37 calories, one gram of fat and one Weight Watchers SmartPoints. Also, these meatballs freeze really well. I like to divide them up and them pack in pint-size containers to freeze for several servings in the future.

Prep Time: 20 minutes
Bake Time: 18 minutes

Ingredients:

Cooking spray
1 package (1.25 pounds) ground turkey, see shopping tips
¼ cup Panko bread crumbs
1 large egg, I like Egg-Lands Best
½ cup onions, finely minced
⅓ cup celery, finely minced
⅓ cup carrots, finely minced
1 clove garlic, minced
½ teaspoon salt
Freshly ground black pepper, to taste
⅓ cup Franks RedHot sauce, see shopping tips
Skinny Ranch Dressing, for dipping (make your own or use your favorite light ranch)

Instructions:

1. Preheat the oven to 400 degrees. Line a baking sheet with foil and lightly coat with cooking spray. Set aside.
2. In a large bowl, combine the ground turkey, Panko bread crumbs, egg, onions, celery, carrot and garlic, salt and pepper. Using clean hands, mix until combined. Roll the mixture (⅛ level cup each, into 28 round meatballs.
3. Place meatballs onto baking sheet and bake until cooked through and golden, about 16 to 18 minutes.
4. Remove meatballs from oven and place in a bowl.Add buffalo sauce and gently toss to combine. Serve immediately or reheat when ready to serve.You can serve them with skinny ranch dressing on the side for dipping, or, add the meatballs to a serving plate and drizzle them with one teaspoon ranch dressing. Add a toothpick to each, if desired, and viola!

Shopping Tips

Franks RedHot Original sauce is my favorite for this recipe. Many hot wings sauces are way too spicy for my taste. This one is just spicy enough. You’ll find it in most supermarkets where Tabasco and other hot sauces are sold. Or use your preferred hot sauce.

I used 93% lean ground turkey for this recipe. Since you bake these meatballs, most of the fat oozes out onto the baking sheet. Because of this, the skinny facts below are based on subtracting out some of the fat.
